Abstrak

ABSTRACT: : consumption of fresh fruit. This research was conducted in Lobong Village, Passi District, Bolaang Mongondow Regency for 3 months from March 2017 to May 2017. Pineapple fruit generally reaches maturity after 120- 170 days and then blooms depending on the variety. Ripeness then proper jam is at >25%- 50% ripe. The results showed that pineapples could be harvested at ripe conditions > Breaker 25% with 69.92% flesh a nd 18 acids, 9 fresh fruit, 4 days fresh curl resistance at room conditions and 6 days at 150c. As a basic ingredient for jam, pineapple can be picked > 25%, ripened and processed into jam with the addition of 65%. With the above formula, the yield of jam reaches 67.30% with good quality, which is supported by the respective color scores and case 3.37 and 3.95. To maintain the quality and speed up the cooking process and increase the yield, sugar is added when 20% of the water has evaporated. The organoleptic test of each panel did not know that corn jam was made from ripe natural fruit and carbide ripe fruit, and from the results of the organoleptic test the panelists chose sample A, the texture was more savory, fragrant, sweet and dark brown. As for sample B, comments from hours, hours from sample B can only last a week. For making good quality jam, it is recommended to use natural pineapple rice.
